When we discovered how to temper chocolate, a whole new world of creativity opened up for us at Rok Blox.
We immediately began dreaming, imagining and thinking of different permutations of blox that could be both visually exciting and tantalising to taste. The one idea that kept coming up, over and over, was a green marbled block, made of Japanese matcha powder. We procured our supplies from Matchleaf and could see the ceremonial grade quality was going to make a gorgeous chocolate colour and flavour.
We researched complementary flavours to matcha, and found that citrus, usually lemon, was most often paired with matcha. The acidity of lemon or yuzu helps to break through the dense wall of matcha flavour when applied in foods instead of tea. But we also found many complaints about "fake lemon" flavour, and we wanted to avoid such a tragic alchemical result. When we discovered native desert lime powder, freeze-dried and ready for mixing into couverture, we knew we were onto something.
So, voila! Here it is - the green marbled blox I dreamed of for weeks on end has finally materialised at Rok Blox. We are so excited to see the gorgeous patterns arise from the blending of the matcha couverture with the desert lime flavoured couverture.
As always at Rok Blox, no two blox are alike, and these Matcha & Desert Lime Rok Blox are no exception to that rule. We noticed the green of the matcha matured each day after casting, becoming more vibrant and appealing once we'd polished and wrapped it. We suspect the flavour will have matured as well. Hungry yet?
